COMPANY POTATOES

So this is a very popular dish in my family. It’s called company potatoes because we make them everytime we have company. A little history on this particular recipe. Way back in March 1993 I was playing golf professionally on the Women’s Players West Mini Tour. We had a tournament at China Lake GC in Ridgecrest on the base. I was fortunate enough to stay with the C.O. of the base. Nicest family!! Lori Ann Craig made these potatoes one of the nights we stayed there and of course I had to have the recipe. Thank you Lori Ann for an awesome recipe. So here it is!

1 32oz bag Frozen Hash Brown Potatoes, thawed
1 Onion, chopped
1 cube Butter
1 can Cream of Chicken soup
1 1/2 cups Shredded Sharp Cheese
1/2 cup Mayonnaise
1/2 cup Sour Cream
French Fried Onions
Salt & Pepper

Sautee onion with butter and season with salt and pepper. Cook till onion is translucent.
Add rest of ingredients in a large bowl (except french fried onions) and mix till well combined. Add cooked onions & butter and mix. Put into a 10″ x 14″ dish (Lasagne size pan). Bake at 350 degrees for 30-45 minutes. Add french fried onions on top and bake for another 10-15 minutes or till the onions are nice and brown. Serve immediately.
