SALMON CAKES W/ RED PEPPER AIOLI SAUCE

Ingredients

1 1/4lb Salmon, cooked & flaked
3 Tbs Red Onion, finely chopped
3 Tbs Cilantro, chopped
1 Garlic Clove, chopped
1 Serrano Pepper, finely chopped
1 Cup Panko Bread Crumbs
1 Egg, slightly beaten
1 Lime, zested & juiced
2 Tbs Olive Oil & Butter
Red Bell Pepper Aioli Sauce

In large bowl – mix all ingredients together (except for Red Pepper Sauce).
Take golf ball size amounts of mixture and press into small disks.
In a skillet, heat olive oil and butter.
Cook Salmon Cakes for 3 minutes on each side.
Makes approximately 20 mini salmon cakes.
Serve with aioli sauce.

Red Bell Pepper Aioli Sauce

2-3 Garlic Cloves
1/2 cup Roasted Red Bell Peppers, drained & patted dry
1/3 Cup Mayonnaise
1-2 Tbs Sour Cream
2 Tbs Olive Oil
Salt & Pepper to taste

In food processor, chop garlic. Add peppers and blend till smooth. Add mayo and sour cream and blend. While pulsing the mixture, drizzle in the olive oil. Season with salt & pepper to taste.
