ZUCCHINI W/ AVOCADO PESTO

4 Zucchinis, Spiral Sliced
2 Avocados
1 Cup Basil Leaves
1 Lemon, Zested & Juiced
2 Garlic Cloves, Peeled & Chopped
1/2 Cup Olive Oil
1/2 tsp Salt & Pepper
1 Cup Cherry Tomatoes, Halved

Spiral Slice the zucchini and set aside

In food processor – add avocado, basil, lemon zest & juice, garlic, salt & pepper. Pulse till smooth. Add olive oil and continue to pulse till smooth. Add more oil if sauce is too thick.

Add sauce to zucchini and cherry tomato halves.

Serve at room temperatures.
