WELSH CAKES

Ingredients

4 cups Flour
2 sticks Butter
1 tsp Baking Powder
¾ cup Sugar
2 Eggs, beaten
1½ cup Sultanas & Craisens, floured
Zest of 1 Orange
3 tbsp Milk (apprx)

Mixing by hand – Add together flour and baking powder. Rub butter into flour mixture. Add sugar and mix. Making a well in the center of the mixture, add beaten egg and fold into mix. Mix in floured sultanas, craisens and zest. Add 1 to 2 tbsp of cold milk at a time till dough holds together and is slightly sticky. Knead lightly till smooth. Roll out to ¼ inch thickness and cut into rounds.

Brown Welsh cakes on the griddle, 3-5 mins each side till cooked in the middle. Remove from griddle and sprinkle with sugar.
Recipe can be doubled.
