THAI CASHEW CARROT SALAD

Ingredients

8 Carrots – Spiral Sliced
3 Celery stalks – Chopped
3 Green Onions, chopped
1 cup Cilantro, chopped
¾ cup Cashews
2 Tbs Honey
2 Tbs Plum Basil Balsamic Vinegar
2 Tbs Soy Sauce (low salt)
1 Tbs Peanut Butter
2-3 Tsp Ginger, zested
¼ Olive Oil or Sesame Oil
Pinch Salt
Cracked Pepper to taste

In a small bowl whisk together peanut butter, honey, balsamic vinegar, ginger and salt. Add olive oil till desired consistency.
In a large bowl, combine spiral sliced carrots, celery, green onion, cilantro and cashews. Toss to combine.
When ready to serve, add ginger peanut sauce, toss and serve. Serves 6-8 people.
