SPICY CHICKEN AVOCADO TARTLETS – Cambria Kitchen Tour 2014 Recipe

3 Cups Chicken, cooked & shredded (you can use Crab, Lobster, Mangos etc)
3 Avocados, cubed
2 Limes, zested
1/4 Cup Chives, chopped (reserve a small amount for topping)
3 Serrano Peppers, seeded and finely chopped
1/4 Cup Heavy Cream
1/4 Cup Mayonnaise
Pastry Cups, Wonton Cups, Filo Cups or Martini Glasses

In medium bowl – Mix Chicken, Avocados, Lime Zest, Chives and Peppers. Add Heavy Cream and Mayonnaise and mix till combined. Salt and Pepper to taste. Add a scoop of mixture to a Martini Glass and sprinkle with chives and top with Tortilla Chip or Cracker.
