Compound butter – what’s it good for? Um, everything!!!!

You can just about add anything to butter to kick a recipe up a notch. If anyone knows me, they know I love citrus. Lemon, lime or orange zest is one of my favorite ingredients. I love adding it to cakes, dressings, salads, breads……anything. One of my favorite compound butters is Orange Butter. Great to spread on cornbread, scones, banana bread, cake, muffins etc. Also great on fish and pork.

Recipe
2 Sticks of Butter, softened
2 Tbsp Orange Zest
2 Tbsp Honey
pinch of salt

Mix together all the ingredients till it’s well incorporated. Place butter on parchment paper and roll into a log. Refrigerate till butter hardens. When ready, slice and spread on your favorite dish.

– Lime Zest with Cilantro
– Chipotle Cilantro
– Lemon Zest & Lavender
– Basil Pesto
– Vanilla Bean & Cinnamon w/ Honey
– Rosemary, Sage, Thyme & Chives
– Lemon and Rosemary
– Sundried Tomato & Garlic
– Sriracha, Garlic & Honey

You get the picture! Lots of great flavors. You can go nuts….Nuts, you can add those too.
Think about what you are making, can be steaks, chicken, fish or a dessert and decide what flavors you want to top your dish with. At the store we have tons of great spices, herbs, flavored olive oils etc which would be great items to add to butter.
